Tourtiere Recipe

Tourtiere
(French Canadian Pork Pie)

based on a recipe shared by Shelley Camm
makes one 10” pie
time to allow: 2 hours (1 for the filling, 1 for the baking)

In a heavy 3 litre saucepan combine:

1 kg ground lean pork
200g sliced mushrooms
1 small onion, minced
1 garlic clove, chopped
200 ml chicken stock
1/2 tsp salt
1/4 tsp black pepper
pinch of ground cloves
1/2 tsp celery salt
1 bay leaf
1/2 tsp sage
4 sprigs fresh thyme
1 star anise
1/2 tsp allspice
1/2 tsp cayenne
1/2 tsp dry mustard
1/2 tsp nutmeg

3 medium potatoes

Cook over low heat stirring constantly until meat loses red colour and 1/2 the liquid has evaporated. Cover and cook about 45 minutes longer, tasting and adjusting the seasoning to make your palate smile.

Meanwhile boil and mash the potatoes.
Mix mashed potatoes into cooked meat mixture.

Preheat over to 230c.

Prepare sufficient pasty for 2 crust 10" pie. Roll out 1/2 and line a deep 10" pie plate. Fill with cooked meat mixture, Roll out remainder of dough and cover pie. Flute and seal edges, and slash top crust.
Glaze the crust with a mixture of 1 egg mixed with a splash of milk.
Wrap the edges with aluminium foil.
Bake at 230c for 10 minutes then remove the foil, reduce heat to 180c and bake 30-40 minutes longer.

Serve with hot pepper jelly, sour cream or homemade chili sauce.

This evening, we visited the canine ultrasound clinic, where we saw six wee babes! If all goes well, the puppies are due to be born about 7 December 2010.
Let us think loving, healthy happy thoughts for Ellie and her future pups.

After getting  Apache/2.2.16 (Win32) PHP/5.2.14 configured,

I got this error when trying to access a virtual host on my localhost server:

Forbidden
You don't have permission to access /index.shtml on this server.

the solution turned out to be to edit my http-vhosts.conf and add this inside each Virtual Host definition:   

    <Directory "C:/path/to/my/files/">

            Allow from all

    </Directory>

Notes while configuring Apache, php and MySQL on Windows 7

notes from installing apache / php / mysql on Windows 7 64-bit Home Premium with Norton Internet Security

I used the msi installer packages to load the software.

First, I installed Apache and tested it to be sure it started okay and would present me with default html page.
Next, I installed php and was naughty and told Php to load all extensions.... this caused me problems later, which were hard to find, so I took a break and installed MySQL.

MySQL kept giving me messages suggesting I open port 3306

I opened the port on my router, but don't think this was necessary - still got the error message

I solved this by going into Norton Internet Security ->Network Settings->Program Control

I found MySQL and set Access = Allow
I was now able to start the MySQL service

I found Apache HTTP Server and set Access = Allow

I kept getting these errors when trying to start Apache with Php: (the errors were found in the Windows Event Viewer)

Faulting application path: C:\Program Files (x86)\Apache Software Foundation\Apache2.2\bin\httpd.exe

Faulting module path: C:\Program Files (x86)\Apache Software Foundation\Apache2.2\bin\php5ts.dll

I spent the day googling and finally found a suggestion of running php from the command prompt:
ie: c:\PHP5\php.exe -v

this gave me a list of missing dlls (which corresponded to all the php extensions I had enabled, but had not installed)

Now I edited my php.ini file and commented out each of the problem dlls

tried to start Apache again and bingo! it works!

Today Kilvroch Andre (aka "Seamie") and owner Biddy Belcher made their show début at Midland Welsh Corgi Club's Open Show.
They had a very good day, winning both their classes: 1st in Junior Dog or Bitch &
1st in Novice Dog or Bitch.

I am especially happy because they only started training for the show ring two weeks ago!

It has been a busy weekend in the land of Corgis: Sarah Taylor (Bymil & Oregonian) had an emergency C-section to deliver nine Pembroke puppies 1 week early. The mum haemorrhaged and had to remain at the vet. Jo Lovell's Kilvroch Adara at Liebehund, aka "Tansy", has stepped in to help out. Tansy left her own litter of five 5 1/2 week old pups at home and has assumed the role of foster mum for Sarah's babes. Thank you so much, Jo and Tansy.

Tansy is the granddaughter of my "Ellie" (K. Silk Stockings) who as one of an orphan litter was herself reared by a flatcoat retriever foster mum.

1st championship show of the year

I was disappointed with the Cardigan judging of Mrs Valerie Hutton from Australia (Bojojamile Pembrokes). She barely looked at the cardigans shown to her.It was almost insulting the lack of time spent on the dogs, and the excuses she made when placing some of the exhibits above others.

I did not disagree with her choice of main winners, and was thrilled for Sarah Taylor and her bitch when they went on to win a Group 1 under Albert Wight.

Joy of Baking's Rum Balls

Tonight I was inspired by the Joy of Baking's Rum Ball recipe
I used:
200g of toasted walnut pieces blitzed in food processor
11 digestive biscuits (roughly 150g)
2/3 cup icing sugar
2 heaping tbsp organic cocoa powder
2 tbsp plus a blob of golden syrup
1/4 cup plus a splash of Bacardi Superior rum

taste test will be in one week

Well folks, it is that time of year again. The season of mince pies, gingerbread, nuts, butter, sugar, and all.

Last year I experimented with mini mince pies, and found my favourite was Waitrose's Marzipan Topped Mini Mince Pices

This year? Rum Balls.

I haven't made ANY rum balls since moving to the UK 14 years ago. My reason? The lack of 'Nilla Wafers in this fair land. I usually shy away from recipes which call for tinned soup or other pre-processed foods, but 'Nilla Wafers DO make good banana pudding and rum balls.

So... I'll be reviewing various rum ball recipes and substituting various UK ingredients for the 'Nilla wafers.
Tonight, I'll use digestive biscuits and toasted walnuts.... watch this space

Sunday was the final Championship show of the 2009 year.
Summer qualified for Crufts on her first time out.
Our breeders group of Ellie, Tansy, Murray and Summer placed 2nd in Group.
Fang just made it onto the top 10 stud dog list for the year in the CWCA list.
