Biscuit of the day: Lemon Poppy Seed Sandwiches
Lemon Poppy Seed Sandwich Cookies - 403172 - Recipezaar
with cranberry jam filling, these are rich, yet not too sweet:
the ingredients are: Butter, icing sugar, flour, lemon zest, poppyseeds and the filling is cranberry jam!

Joy of Baking's Rum Balls
Tonight I was inspired by the Joy of Baking's Rum Ball recipe
I used:
200g of toasted walnut pieces blitzed in food processor
11 digestive biscuits (roughly 150g)
2/3 cup icing sugar
2 heaping tbsp organic cocoa powder
2 tbsp plus a blob of golden syrup
1/4 cup plus a splash of Bacardi Superior rum
taste test will be in one week

Baking for Christmas
Well folks, it is that time of year again. The season of mince pies, gingerbread, nuts, butter, sugar, and all.
Last year I experimented with mini mince pies, and found my favourite was Waitrose's Marzipan Topped Mini Mince Pices
This year? Rum Balls.
I haven't made ANY rum balls since moving to the UK 14 years ago. My reason? The lack of 'Nilla Wafers in this fair land. I usually shy away from recipes which call for tinned soup or other pre-processed foods, but 'Nilla Wafers DO make good banana pudding and rum balls.
So... I'll be reviewing various rum ball recipes and substituting various UK ingredients for the 'Nilla wafers.
Tonight, I'll use digestive biscuits and toasted walnuts.... watch this space
